Chicken and Biscuit Dumplings
It’s getting really cold and gross so I decided to try a spin on one of my favorite foods, chicken and dumplings. I was not disappointed!
Ingredients
- A rotisserie chicken, already cooked
- 32 Ounces of Chicken stock
- Can of evaporated milk
- Can of cream of chicken
- Half a stick of butter
- Can of corn
- Can of carrots
- Can of biscuits (not the flaky ones)
- Cup of flour
Directions
- Get all the usable meat from the chicken and toss any skin pr bones. (Or be gross like me and eat the skin.)
- In a large soup pot melt your butter and then add in your can of cream of chicken.
- Chop each biscuit into 4 pieces and roll each piece in a bowl of flour. Set them aside.
- Add your chicken to the pot and stir to mix.
- Season with salt, a lot of pepper, garlic powder, and Garlic & Herb Dash if you have it or anything similar.
- Pour all 32 ounces of stock into your pot.
- Add 32 ounces.
- Add your corn and carrots (do not drain)
- Add in your can of evaporated milk.
- Stir to combine and bring to a boil.
- Add in your biscuit pieces and cook at a boil for 30 mintues. Stir occasionally.
