Chicken and Biscuit Dumplings

It’s getting really cold and gross so I decided to try a spin on one of my favorite foods, chicken and dumplings. I was not disappointed!

Ingredients

  • A rotisserie chicken, already cooked
  • 32 Ounces of Chicken stock
  • Can of evaporated milk
  • Can of cream of chicken
  • Half a stick of butter
  • Can of corn
  • Can of carrots
  • Can of biscuits (not the flaky ones)
  • Cup of flour

Directions

  • Get all the usable meat from the chicken and toss any skin pr bones. (Or be gross like me and eat the skin.)
  • In a large soup pot melt your butter and then add in your can of cream of chicken.
  • Chop each biscuit into 4 pieces and roll each piece in a bowl of flour. Set them aside.
  • Add your chicken to the pot and stir to mix.
  • Season with salt, a lot of pepper, garlic powder, and Garlic & Herb Dash if you have it or anything similar.
  • Pour all 32 ounces of stock into your pot.
  • Add 32 ounces.
  • Add your corn and carrots (do not drain)
  • Add in your can of evaporated milk.
  • Stir to combine and bring to a boil.
  • Add in your biscuit pieces and cook at a boil for 30 mintues. Stir occasionally.

And serve! I hope it keeps you warm and cozy.
